My Weekend
Oct. 3rd, 2004 02:01 pmI went out to eat to much yesterday. Went out to the Mediterranean Market for lunch. I noticed that they still have a help wanted sign up. There are a couple of jobs that I'm going to apply for this week, and if I don't hear anything from them by the time I get back from Canada, I will see if the Market still needs help. I love the food they sell. Minimum wage, but I am starting to feel guilty about the amount of money I'm spending. I have gotten used to a good paycheck.
Went to KC and ate out again. Just sandwiches and a wonderful Mocha Java Shake with hot fudge. And bought some things I needed at K-Mart - light bulbs and Trivial Pursuit. Not the happiest with their changes, but I do better with Wild Card than I ever did in Literature. Finally made it to some nice church (Frank Lloyd Wright was involved somewhat in the design) and saw the Battlefield Band. Damn good music.
So not going out to eat. Robin is in town, so I invited her over for dinner. I shall be meeting her elusive boyfriend. Yeah, gaming leads. I'm trying to clean out the fridge before heading out of country. The saddest is the amount of molding cheddar I have. Answer: Soup.
Sopa de Queso y Cerveza (Beer and Cheese Soup after Kelly's Spanish Dictionary)
1 bottle Corona
2 cups Water
1 cube Vegetable Bullion
2 Potatoes
Cut potatoes (especially growing eyes). Add to pot with beer, water and cube. Bring to a boil and cook until potatoes are vaguely soft.
6 tablespoons Butter (or 48% vegetable oil spread if that is what you have)
1 Onion
1 clove Garlic
Cut up onion. Scoop potatoes out of broth and put in frying pan with butter, garlic and onion. Fry until soft, but not brown (5 minutes or so).
1/4 cup All Purpose Flour
Add flour and continue frying for another 5 minutes or so. Dump fry mixture into broth. Bring entire mess up to boil. Then put in crockpot (since it does not involve flame, I am much more comfortable simmering soup in it) and simmer for 45 minutes or so, until thick. Wash margarita residue out of mixer. Puree soup in mixer, then back in the crockpot.
1 cup Half and Half
3 oz chopped Cheddar (minus the mold)
6 oz chopped Oaxaca Cheese (white Mexican cheese that melts well)
Buy some Half and Half at the grocery store when you realize you needed some cream for the recipe (might as well buy the stuff that has to be sold today, because it is 2/3 the price). Try to salvage some Cheddar, feed some to the cats, though I suggest not to much if you are having guests over later. Add cream and cheese to soup. Keep on low heat until cheese is melted. Do not overheat until cheese seperates, this is icky. Serve with green onions and tortilla chips.
