Baking Experiments

affrecaOne of the highlights of working from home for me has been baking. I'm somewhat proud that I'd already started baking bread with yeast several months before Covid, so I had a jar of yeast before the yeast shortage. I haven't baked bread every week, but I have made enough to have some standby recipes.
Then, in the last month or so I've started making scones periodically. So far, the bacon cheddar scones are my favorite, but they do require planning and multiple steps. The recipe I've made the most often is papaya coconut, because I wanted to use up the random tub of dried papaya. This has convinced me that my mother is right, and fresh scones are worth the minimal baking effort for me. (She started baking scones semi-regularly after I moved out).
And cookies. I've been cooking a lot more new to me cookie recipes. In December, I went to the local "natural" food store because I've seen almond flour in their bulk bin area, and I wanted to make Claire's Pistachio Pinwheel cookies. I did not find almond flour, so I bought almonds and ground them in food processor (one of my favorite two dollar yard sale buys). I ground to many almonds. So I made the pinwheels, and they were good but more faffing about than I normally care to do (I do not live in NYC, and can not buy pre-shelled pistachios, and it turns out my kitten is obsessed with pistachios and can not be deterred from stealing them). So since then, I've made almond shortbread cookies (nom) and almond chocolate thumbprint cookies (waiting for them to cool).
I've bought cheesecloth because I want to try to make a small batch of farmer's cheese, but it's been a stress (because I have an overdue project with procrastination issues) and headache week. And ordered raspberry bushes, so maybe in a couple years I'll have enough to try making jelly.
