Making Soup
Sep. 6th, 2004 01:29 pmIt has been a good weekend. Yesterday I made some cornbread (from the uber-cheap mix from Aldis) and went out to C&C's farm. There was a bit of worry, as we could see the line of thunderstorms sweeping across Kansas, in typical Labor Day fashion. Quickly split along gender lines, with Tom and Caleb making fire and Casey and I cutting up veggies for the bean soup. I cut myself while cutting up onions, using a pocket knife, as none of us had thought to bring out a real cooking knife. Proper camp cooking. Thankfully, they had precooked the beans before getting out there, because while the first line of clouds didn't rain on us, the deluge came down halfway through the meal. We packed up and retreated to their trailer for the rest. Left the fire, as the rain was doing a great job of putting it out.
The food was tasty (especially after a small hit of Thai hot sauce). Around nine, Tom and I packed up to leave. The truck is slightly hard to back up. Tom backed a bit to far, into the ditch. It is a very fine ditch, deep and narrow. The truck ended up resting on three wheels and the rear bumper. Tried to free it, but there was not traction in the back. So we ended up on the pullout bed for the night. If you aren't the one having to comfort him, a teething baby wakes you up less than a pair of kittens attempting to nurse on your neck. And a pullout bed is no worse than a thing futon pad.
In the morning, we freed my truck. About the best place to get stuck, Caleb has the know how to properly use his two jacks and cinder blocks to free my poor baby (of course, my jack is stored underneath the truck, where we couldn't get to it). Jacked up the truck and placed the blocks under the free tire, then drove it out. Worked like a charm. I am very happy that my response to all this is amusement. I still trust Tom with my truck. I just shall not let him forget this. It trumps driving over Wolf Creek Pass after sunset with his sunglasses on.
Now I am home, putzing and doing nothing special. Not in the mood to clean, study or job hunt. Got plenty of sleep. To restless to read. I had my copy of "The Joy of Cooking" out, flipping for magic bar recipes and found a couple of recipes for corn chowder. I have been threatening to make some for a couple of weeks, since it is one of the foods I miss from Japan. Ok, it is not a traditional Japanese recipe, but it is one of the most common soups in restaurants and grocery stores. So, I combined the two recipes, cut out the bacon, and I think it turned out well. I desperately want some cheddar jack to put in it though.
Kelly's Corn Chowder
1 onion
2 garlic cloves
Cut up the onion and garlic, fry in the bacon grease that you forgot to clean out of the frying pan two days ago.
2 potatoes
2 cups milk
dried chives and parsley
Cut up potatoes. Put fried mix, potatoes, milk and spices in pot (clean out the chocolate from making fudge first). Bring to boil.
1 can creamed corn
Put corn into crockpot. Dump pot into crockpot. Turn crock pot on high. Wander around apartment for about half an hour. Scoop most of the solids out of the crockpot into the blender. Thank relatives for fully stocked kitchen, thank Casey for rolling island idea. Blend on high, pour back into crockpot.
1 more can creamed corn
chili powder
dried cilantro
Add second can. Turn to low. Add spices. Let simmer for a while longer. Turn off until ready to eat.
shredded cheddar jack cheese
Pour soup into bowl, add cheese to taste. Eat with garlic toast or canned biscuits.
