Oct. 13th, 2025 01:53 pmTrying this recipe for Butternut Squash and Chicken. Planned alterations include: adding freshish rosemary and thyme because I have only one small sprig of sage, swapping 1 tablespoon of balsamic vinegar since I don't have any lemons, and using the instant pot because I don't want to make a sauce in the cast iron frying pan. Plan is to use the slow cooker instructions, but cook the chicken and squash for 12 minutes under pressure. Oh, and maybe crumble some goat cheese on top because I have it.

10 minutes under pressure, 10 minutes self release - probably to long, meat a little dry
sprinkles of paprika instead of black pepper (because me)
maybe add a roux for the sauce? or boil it longer, but so damn tasty
