Honestly, I just followed the recipe this time, with minimal substitution (dried thyme for fresh). I thought I substituted baby bella mushrooms for the listed cremini, but when I did research I found out they are just two names for the same thing. Apparently white, cremini and portabella the same mushroom at differing maturities, and cremini are being marketed as baby bella. I shall be very smug as I eat it for lunch at work. I might be making fed money, but I can budget like I was making state money.
