Recipes to cook again
Mar. 29th, 2015 05:26 pmFirst, my first attempt at yeast bread. I think it went well. Recipe from King Aurthur flour.
2 tablespoons olive oil (to drizzle into the pan)
1 1/2 cups warm water
3 tablespoons olive oil (for the dough)
1 1/4 teaspoons salt
3 1/2 cups All-Purpose Flour(except I misread the recipe before shopping and bought bread flour)
1 tablespoon instant yeast (approx 1.5 yeast packet, will buy jar if make this more often)
1 tablespoon grated parmesan (the green can, the stuff Lawnchair puts on pizza)
1 teaspoon garlic powder
thyme, parsley and oregano
1) Lightly grease a 9" x 13" pan, and drizzle 2 tablespoons olive oil in the bottom.
2) Combine all of the ingredients, and beat at high speed with an electric mixer for 60 seconds.
3) Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it's become puffy.
4) While the dough is rising, preheat the oven to 375°F.
5) Gently poke the dough all over with your index finger.
6) Drizzle it lightly with olive oil, and sprinkle with pizza seasoning, and/or the dried herbs of your choice, if desired.
7) Bake the bread until it's golden brown, 25 to 30 minutes.
8) Remove it from the oven, wait 5 minutes, then turn it out of the pan onto a rack. Serve warm or at room temperature.
Next, split pea soup (to remember which of the many variations online I made). Recipe from real simple.
2 tablespoons olive oil
1 medium onion, chopped (1 1/2 cups)
2 carrot, chopped (1/3 cup)
4 cloves garlic, through press
6 cups chicken broth
1/2 pound baked or deli ham, chopped (2 cups) (or three ham hocks, because I think the frozen ham is to freezer burned to use)
1/2 pound dried split peas (1 cup) (I added another half cup of yellow split peas because I had them)
1 tablespoon chopped fresh thyme
salt
1) Heat the oil in a large saucepan over medium-high heat. Add the onion and carrot, and cook until tender, 5 to 7 minutes. Add garlic, cook for additional minute.
2) Add the broth, ham (hock), split peas, and thyme to the saucepan; season with salt. Reduce heat and simmer until the peas are tender, 55 to 65 minutes. Remove hocks, let cool. Strip hocks and return the meat to the soup. Eat with the tasty bread from the above recipe.
