Grilled Stuffed Poblano Peppers
Jul. 7th, 2010 01:58 pmGuess what's growing well right now? So, time to try out a recipe for them. Writing this down because it will be a synthesis of a couple that I've read.
1/2 c rice
1 c water
Cook rice in rice cooker.
3/4 lb hamburger
1 small jalapeno
3 small (or 1 regular) onion
springs of cilantro
Dice jalapeno finely, onion coarsely. Brown in skillet with cilantro and hamburger.
3 small tomatoes (Roma)
1 tbsp Turkish Seasoning (Penzey's mix)
6 oz pepper jack (shredded)
Dice tomatoes. Mix in large bowl with rice, hamburger mix, cheese and Turkish Seasoning. Sample.
Poblano peppers - will write when get to that stage. Also, suspect I will have plenty of leftover filling. Good thing we have tortillas - lunch for the rest of the week.
