Soup is Done
Jan. 31st, 2009 09:40 pmFound the base of this recipe when googling for bean/spinach soups. I suspect someone invented it while trying to clean out their cabinets - but it was mostly stuff I needed to clean out/use.
3 c mixed dried beans
1 cube vegetable bullion
4 cubes frozen vegetable stock
3 bay leaves
2 tsp cumin
Make beans in the normal way. Add vegetable bullion/stock in last hour of simmering. Add spices
3 leeks
3 cloves garlic
2 tbsp olive oil
Chop leeks and garlic, saute in olive oil. Add to simmering beans.
1/4 c couscous
1/2 10 oz frozen chopped spinach
Add to beans. Simmer until spinach is thawed, and stir well. I'm not completely happy with spices, might tweak it. Also, I'd add more couscous, as it added an interesting flavour, but that is all the couscous I had (but I finally killed the couscous, and might get more to cook with chicken stock).
