Spinach Rectangle
Sep. 23rd, 2008 05:48 pmOr I didn't feel like folding all those damn triangles, but wanted to use up stuff in the freezer (only specifically bought ingredient was scallions).
1 bunch scallions
3 cloves garlic
1 tbsp olive oil
2 packages of frozen chopped spinach
1 can mushrooms
Chop scallions, including green tops, and garlic cloves. Fry for a couple of minutes in olive oil. Add in spinach (hopefully defrosted) and mushrooms (minus liquid). Continue to fry for a couple more minutes. Put aside and let cool.
8 oz crumbled feta
1 egg
1 8oz package of phyllo dough
3/4 c butter
Add feta and egg to spinach mix. Melt butter. Spread a layer of butter on bottom of 9x13 pan. Add one layer phyllo, brush with butter. Continue for half of the phyllos sheets. Spread out spinach mix ontop of phyllo, and continue with phyllo/butter layers. Bake at 350 for 50 minutes.
