Mushroom Chicken with Rice

1/2 carrot
1/2 celery stalk
Place in greased 8x8 casserole dish.
1 shallot
1 tsp garlic
1 can mushrooms
Reserve mushroom juice in mixing bowl. Fry rest in olive oil.
1/3 c sour cream
1 can condensed milk
1/3 cube vegetable stock
Mix and add fried bits. Pour into casserole dish.
2 chicken legs
Lay on top of mixture in dish with skin side up. Bake at 350 with casserole lid on for 45 minutes, remove lid and cook for another 15 minutes.
Served with crescent rolls out of can. I liked the rice bit. Chicken was.. superfluous. Carrot and celery didn't blend, or really soften. Wild rice would have been better. So I think minus the chicken, carrot and celery it would be a good side dish.
