Roast Chicken for Terrible Weather

Sunday, I bought a chicken to roast. I figured I was going to be home all week. But the chicken was still frozen, so I didn't cook it Sunday. Monday was beef stew that Lawnchair made for old man club (he is responsible for bringing dinner for the Masons this year). Tuesday was fiber guild. Yesterday, Lawnchair took the day off, so we went out for Indian buffet for lunch and therefore weren't hungry the rest of the day.

The temperature is over thirty degrees colder today than yesterday. At one point, the local paper listed the current conditions as unknown precipitation, fog/mist and breezy. Kansas, where audible wind is described as "breezy". Lawnchair decided to work from home, and I decided that it was time to roast that damn bird. Noodling around, I found a tasty recipe that included ingredients I actually had. The major substitution was a lime for a lemon. I'm not sure why we had 3/4 of a lime in the fridge, but.. Now I just have to wait for it to rest enough to carve.
