Cooking Crazy
Jun. 2nd, 2006 08:53 amI cooked more yesterday than I have in.. well, forever. For dinner I made that spinach dish (as a side), mashed potatoes (a first for me, which is odd considering how much I love mashed potatoes), and four fruit crisp (except mine was Five Berry). This recipe is from the Simply in Season cookbook, and is fun in its freedom and ease. I already bought more frozen fruit for the next couple of tries.
Four (or as many as you want) Fruit Crisp
6 cups of fruit (mix and match, and can be fresh or frozen or canned, I used 1.5 cup frozen rasberries, 1.5 c frozen blackberries, 1.5 c frozen strawberries, 1 c frozen blueberries and 0.5 c mulberries from my yard.. I'm a sucker for mulberries)
Mix and dump into a 10 inch deep pie pan or 9x9 inch pan.
3/4 c flour
3/4 c oats
3/4 c brown sugar
1/3 c nuts
3 tblsp butter
2 tblsp oil
Mix these together until crumbly. Sprinkle over fruit. Bake for approx 30 min at 375 until top is golden. Eat with vanilla ice cream. Not much sugar, but so good. And not to expensive with frozen fruit.
