yanbaogin and I ate today for dessert, but here's the recipe my Indian cookbook has.
1 lb raw beetroot (or carrot, bottle gourd or sweet potato)
4 c milk
3 c sugar
1/2 c butter
1/2 teaspoon saffron strands or few drops of yellow coloring
Peel and grate the beetroot. Place in heavy pan and sprinkle with few drops water. Over low heat, cook and stirr constantly for 5 min. Gradually add milk and mix. Leave to simmer until milk has reduced to 2 c. Add sugar and simmer until sugar is dissolved. Dissolve saffron in a few drops of hot water or milk and add. Mix well. Add butterand stir until the butter melts and makes mix leave the side of pan.
