Lentil Soup
3 celery stalks
8 baby carrots
1 onion
4 garlic cloves
1 tbsp garlic from jar
3 tbsp olive oil
Heat in pot for about 5-10 min, until soft, not brown. Should smell garlicy good. Add to pot
1/2 green pepper
1 dried hot pepper
8 cups water
2 cups lentils
14.5 oz can of diced tomato
1 tsp dried thyme
3 tbsp Turkish Spice (Penzey's)
Bring to boil. Reduce, simmer for 45 minutes.
