Turkey Dumpling Soup

1 stripped turkey carcass
Put into pot. Fill pot with water until carcass is covered. Bring to boil, then simmer for 30 minutes.
1 onion
1 carrot
1 celery stalk
4 cloves garlic
1 bay leaf
1/2 tsp thyme
1/2 tsp parsley
1/2 tsp salt
4 celery leaves
Cut up onion, carrot and celery stalk into largish chunks. Add with spices to pot. Continue simmering for another 3 hours. Strain into new pot. Let cool, put in fridge. Skim off grease. Put in freezer. Be really confused by texture.

1 tbsp mince garlic from a jar
Put pot back on stove and heat. Cut up onion, carrots, celery and turkey into small chunks. Add to pot.
1 egg
1 tsp salt
1/2 cup milk
1 1/2 sifted flour
In a bowl, beat egg. Add salt and milk and stir. Add flour. Mix until lumpy. Add to boiling soup in 1 tsp sized bits. Cover pot, let boil for 15 minutes. Tasty.
One warning, will turn into jello in the fridge. It is perfectly fine again after a minute in the microwave. Pineapple juice might help, but not sure about the taste.
