Lentil Soup

Putzing around. I'm back to analyzing my decision making process. My gut tends to make the choices, and then I agonize over why it picked this idea. I usually go along with it. Which in this case is going to KU. I think my reasons are two things I don't usually think are valid reasons, money and men. The money side is that if I go to KU, I might get a MS without student loans. Between the TA position, scholarship and GI bill I'll be making more than I make now, and have a tuition waiver. Tempting. The men side is Tom still has another year left in his program, but has agreed to move in with me if I stay. With four cats, so we might look at duplexes or houses.

Making lentil soup. The recipe is adapted from one I found on the internet, due to what I have in the house.

2 teaspoons olive oil
1 cup chopped onions
3 large cloves garlic, minced
½ teaspoon cinnamon
¼ teaspoon ground cloves
1/8 teaspoon minced fresh ginger
¾ teaspoon ground cumin

In a soup pot, heat the oil over medium-high heat. When hot, add the onions and garlic and saute until translucent. Add cinnamon, cloves, ginger, and cumin, and saute about 2 minutes.

1 ¼ cups dried green lentils
8 cups water
1 cup chopped dried apricots and apples

Add lentils, water, and apricots and cook 1 hour, or until the lentils are completely soft. Season with salt, garnish with paprika.
