Lentil Soup, Again
Jan. 26th, 2014 11:02 amTrying to use up stock without chicken meat. Posting in case this is the tasty lentil soup I really want to make.
olive oil
1 onion
2 cloves garlic
2 carrots
1 tbsp turkish seasoning
1/2 tsp chili powder
pinch salt
6 cups chicken/turkey stock
2 cups red lentils
1 tbsp lemon juice
Cut up and saute onion in pot until translucent. Add garlic (minced) and carrots (cooked) for a couple of minutes. Add spices, and add stock after a minute. Once stock is melted, add lentils. Bring to boil, then lower temp to simmer for twenty minutes. Add lemon juice and serve. Seems tasty enough this time.
