Spinach Bean Soup

2 cups dried lima beans
1 cup chicken stock
2 cups vegetable bullion
water
oregano, rosemary, salt and savory
Soak in water for a day or so. Drain. Add stock, bullion cubes and enough water to cover by 2 inches. Boil, then simmer until water is just above beans, adding spices somewhere in there. Check to see if beans are done (should be). Throw in crockpot.
1/4 onion
2 tbsp minced garlic
1 shallot
Chop shallot and onion. Fry with garlic in olive oil. Add to crockpot.
1/2 10 oz package of chopped spinach
Thaw spinach (which I forgot to do). A milder soup, but a nice change. And still cheap (approx $3 in ingredients).
