Following recipes
Aug. 30th, 2020 07:10 pmLawnchair brought home a whole chicken his last grocery run, and roasted with vegetables is my favorite way to cook the whole bird. So I pulled out my Joy of Cooking book to look up time and temperature. But this time, I actually read the recipe. Apparently they've been recommending a large rimmed sheet pan the whole time I've been roasting in my casserole dish. And they recommend cutting up the vegetables into smaller pieces than I've been cutting them. So I actually followed the recipe*, and it turned out amazing.
*OK, so I used twice as many carrots and didn't cook any celery, because we never have celery in the house. And I used 1 large sweet potato instead of several smaller white potatoes. And I used herbs de provenance instead of thyme. And roasted the vegetables the entire time instead of adding them 10 minutes in. And I used olive oil instead of vegetable oil. But for me, that's following the recipe.
