I want this article about Britian's Prince Phillip to be true. See, there's this splinter group of a South Pacific cargo cult that thinks he is a god. And they want him to come live with them. The Queen's husband!

Had another great dinner. Thai today. I think I might have finally mastered cooking the tofu. I fried it in my wok with almond and seasame oil. And I used fresh vegatables, instead of the frozen I usually use, since we have plenty in the house. I didn't have any peanuts or cashews to add. I also made some tasty spring rolls. We have two open jars of peanut sauce, because I strongly dislike one of them. I got to use some of [livejournal.com profile] lawnchair's lettuce patch for that. Bought cilantro because most of the leaves died on my plant, and now it is just flowering like crazy. I think we'll use the rest of the bought bunch for pico de gallo tomorrow. This is such a nice change from the days of not eating because I couldn't figure out what to eat. Much more fun and tasty.


Thai Coconut Curry

1 lb tofu (I'm lucky, I have a local brand I can buy at Checkers, so I do)
1 tblsp garlic (I don't know how I'd cook without the giant jar in the fridge)
oil (I used almond because we got it cheap but never use it, so why not?)
seasame oil (very key, the taste I've been trying for years to get when cooking tofu)

Heat up the wok. When water dances, add oil and seasame oil. Add tofu and garlic. Stir and fry until tofu is golden brown.

1 can coconut milk
1 tblsp Thai Kitchen Red Curry Paste (I usually don't write recipes with specific brands, but this is the stuff)

Add to wok. Simmer for 5 minutes. Start rice. Hopefully you cook rice better than I do. I hate how mine turns out, so I really can't advise how to cook it.

1/3 c water
1/4 cube vegatable bullion (I think this just goes in for the MSG)
2 tblsp brown sugar
3 tblsp fish sauce (found in the oriental section of some grocery stores, OK to skip if you can't find it)
1/2 lb vegatables
1 small can of water chestnuts
1 handful peanuts or cashews (chopped finely if you have time, but not to powder, about 1/4 cm works)

Add all this to the wok. Simmer for another 15 minutes, or until rice is done. Spoon rice onto plate, add curry. You can decrease the curry paste if it is to much for you.


Spring Rolls

1 c rice noodles
3 c water

Bring water to boil. Dump noodles in. Take off heat after 2-4 minutes. Strain and run cool water over noodles. Strain. (Adjust amount of noodles you think you need. I guesstimated or swagged.)

3 rice paper wrappers
lettuce
cilantro
fake crab meat (or shrimp, or tempeh)
1 baby carrot cut finely the long way (or grated)
peanut sauce

Pour water on a large plate. Soak wrapper in water until flexible. Put noodles, lettuce (about 2-3 leaves), cilantro, meat and carrot in center of wrapper. Fold like a burrito. Repeat. Dump any leftover salad fixings into [livejournal.com profile] lawnchair's salad bucket. Try to feed leftover crab meat to indoor kitties. Realize that my cats are vegatarians and would rather steal peas than eat flavored fish. Figure Maggie Mae is preggers anyways, she needs the fish oils more than the spayed family. Serve with peanut sauce (preferably the brand you like, I suggest Thai kitchen).
